Made with fresh milk from the pastures within the estate, the ricotta of the Hyblean Mountains is the heart of many of our dishes.

Soft, fragrant, and pure, it is served on its own or paired with wild greens and local honey, bringing out the genuine essence of the land.

Raised free-range in the woods of the Iblean hills, the Sicilian black pig represents one of the island’s oldest and most prized traditions.

From its meat come artisanal cured cuts and flavorful main courses, prepared according to the Nifosì family recipes and paired with wines from the Eremo’s own cellar.
