In the oldest part of the Eremo lies the wine cellar — an intimate, stone-walled space where wines that tell the story of the true Sicily are kept. It is a selection shaped over time by the Nifosì family, featuring labels carefully chosen from wineries that favor quality and sustainability.
The goal is to offer guests a journey across the island through its wines: from the hills of Vittoria, home to Cerasuolo and Frappato, to the slopes of Etna, where mineral whites and elegant reds are born.
The cellar also houses the estate’s own wines, produced at Tenuta Giubiliana from native grapes, following an agricultural philosophy that honors the natural cycles of the land. During the season, guided tastings and pairings with dishes from the restaurant can be arranged, designed to highlight the many nuances of Sicilian wines.
